Welcome back to Blossom Hill, a beautiful town that hosts my short story, Bloom and Brew: Episode 3.
Today we made Lemon Cream Ricotta Pancakes (gluten free of course)
Ingredients:
āØ1/2 cupĀ ricotta cheese
āØ1/2Ā cupĀ all-purpose flour
āØ1/4Ā teaspoonĀ baking powder
āØ1 tablespoonsĀ granulated sugar
āØ1/4Ā teaspoonĀ fine salt
āØ1/2Ā cupĀ milk
āØ1Ā large egg
āØ1/2Ā teaspoonĀ vanilla extract
āØ11/2 tbs lemon cream or lemon curd
āØ1/2 tbs greek yogurt
⨠zest of 1 lemon
š§Butter, for cooking
šØ whipped cream for topping
Instructions:
Combine all the dry ingredients in a bowl
Then slowly incorporate wet ingredients
Grease a pan
Cook and filp š„
